Hobo Packets

  • 1 lb ground turkey
  • 1 clove garlic- minced
  • 1 onion
  • 2 carrots
  • 1 red bell pepper
  • 2 Kernels from fresh corn
  • 5 small red potatoes
  • 4 tblspn olive oil


  1. Prep at Home: chop the carrots and red pepper into bite sized pieces.  Slice the kernels from the corncobs and put in a plastic bag with the carrots and pepper.
  2. Prep at Camp: chop the onion and mince the garlic. You can cut the potatoes into quarter inch slices.
  3. Get out 4 squares of heavy duty tinfoil. Layer the potato slices on each piece of the foil and then top with the vegetables and garlic.
  4. Place olive oil among the four foil packets.
  5. Divide the turkey among the packets.
  6. Season with salt and pepper- fresh basil adds a nice flavor as well if you have some.
  7. Take each packet and bring the two ends of the foil together and fold them several times to create a seam. Roll the open ends towards the middle -this will create a tight seal.
  8. Campfire must burn down to hot coals
  9. Set the Hobo packs on the hot coals and cook between 30-45 minutes- be sure to turn every 15 minutes or so.
  10. Once ready, take tongs to remove the packs from the fire. Be careful of the hot steam once you open the packets!
  11. Taste and Enjoy!
